- For the lemon curd, mix the flour and sugar in a pan.

- Boil the water and lemon zest together then slowly add it to the flour/sugar mix to make a paste


- Add the lemon juice, beaten egg yolk and butter. Heat over low heat until think. Spread over pastry. Put in the fridge to cool for 15min



- For the meringue, whisk the egg whites until soft peaks. Add the sugar spoon at a time

- Pour over the pie and cook for 30min at 150oC
